Looking for a smoothie recipe you can confidently consume for your blood sugars? Look no further than this Cherry Coconut Smoothie!
I’m going to keep things short and sweet, and tell you a bit about the nutrition highlights, then on to the easy recipe.
Here’s a few of the smoothie ingredient that helps balance blood sugars and provide you with with sustained energy:
Cherries: a low glycemic fruit with about 22 grams of carbohydrate per cup, and high levels of vitamin C, potassium, and antioxidants
Cauliflower rice: a great way to boost your fiber intake and push you towards your daily vegetable goal of 3 servings. Plus, it won’t change the color or throw off the taste!
Collagen peptides: a convenient way to add more satisfying protein that stabilizes blood sugars. I love Vital Proteins unflavored collagen peptides.
There’s lots of other goodness for blood sugars in here too, and did I mention the coconut flavor is a perfect pair for cherries? Try it out or you can swap coconut for vanilla too!
Okay, on to the recipe!
Ingredients
1 cup frozen cherries
3/4 cup frozen cauliflower rice
1-2 scoops of collagen peptides
1 spoonful ground flaxseed
1 cup of unsweetened almond or soy milk
sprinkle of unsweetened coconut flakes
Directions
Add all of the ingredients to a blender and blend until smooth and well combined. Enjoy!
